Fruits de Talent is a competition open exclusively to students and apprentices in pastry training programs: the Pastry Specialist Certificate (Mention Complémentaire Pâtissier), the Pastry Technician Diploma (BTM Pâtissier), the Pastry Technician Certificate (BM Pâtissier), the Bachelor’s Degree in Culinary Arts, the Professional Bakery and Pastry Diploma… Candidates must be under 26 years of age on the day of the final. Each year, dozens of applications are submitted, and only 8 finalists are selected by a jury of professionals to compete in the final round.

The competition is presided over by iconic figures in French gastronomy. In 2026, Angelo Musa, winner of the 2007 Meilleur Ouvrier de France in Pastry and Confectionery and the 2003 World Pastry Championship, served as jury president. Previous editions have featured names such as Arnaud Larher and Laurent Le Daniel (MOF Pastry Chef), a testament to the level of excellence expected.

A final challenge that is as intense as it is demanding

The final is held every year in May at the Andros Fruit & Vegetable Workshop in Altillac, Corrèze, just a stone’s throw from the group’s experimental orchard. The 8 finalists have exactly 7.5 hours to complete a particularly ambitious challenge: boutique-style desserts containing at least 50% fruit and three different textures, “bistro-style” desserts to share, ice cream sundaes reimagining a classic pastry, and travel cakes. All of this must be done without artificial colors or flavors, in accordance with the natural standards Andros holds dear.

The contestants take the stage one after another every 10 minutes, each at their own workstation. The organization is meticulously planned: the day before the final, each finalist takes their place, weighs their ingredients, and prepares their ice cream and sorbet mixtures. This rigorous setup is only possible if every workstation is equipped identically, which presents a considerable logistical challenge.
