A temporary modular kitchen to quickly resume operations at La Grange à Pains in Urrugne

On October 13, 2022, a fire destroyed the 300 m² laboratory and warehouse at La Grange in Pains, a true institution in the Basque Country. This production facility served as the central hub for manufacturing products for the brand’s three stores and employed about 30 people.

Faced with this critical situation, the rapid installation of a temporary modular kitchen was essential to ensure production continuity, preserve jobs, and maintain business operations ahead of the holiday season.

Just two months after the disaster, a professional temporary kitchen solution was up and running. Thanks to coordinated support from insurers, experts, and users, the installation enabled the company to quickly restore its production capacity.

A modular kitchen system designed to ensure business continuity

The solution implemented consisted of a 180 m² modular kitchen, installed on a total footprint of 375 m². The facility included 10 technical modules fully equipped to meet the specific needs of a food production laboratory.

This temporary professional kitchen was powered by electricity with a total capacity of 95 kW, ensuring performance suitable for intensive bakery and pastry operations.

Thanks to this modular facility, ten people were able to continue working every day under optimal conditions throughout the 12-month lease period.

A pastry lab tailored to production needs

The modular kitchen installed in Urrugne was designed to precisely meet the production requirements of La Grange à Pains. The module sizes and built-in equipment were specially adapted for use in a pastry lab and food production facility.

This flexibility is one of the main advantages of professional modular kitchens. Each space can be configured according to operational needs: hot food production, pastry, cold food preparation, storage, or dishwashing.

A Quick&Eat solution connected to the lab

One of the project’s unique features was a Quick&Eat sales container that was directly connected to the laboratory via an airlock. This configuration ensured a seamless connection between production and sales while complying with hygiene and food safety requirements.

This solution demonstrates the ability of modular kitchen buildings to incorporate complementary spaces such as retail outlets, distribution areas, or temporary dining areas.
