To celebrate the 100th anniversary of Laiterie Le Gall, the SILL Group has taken on a new challenge: to launch a contest showcasing its line of dairy products, including Le Gall Professionnel butter and cream cheese. Read the interview with Mélanie GENTIL.

Could you introduce yourself in a few words?

Mélanie Gentil: "I'm Mélanie Gentil, Project Manager for Ingredients, responsible for marketing and development of dairy ingredients at the SILL Group."

The Gall Cup

Can you briefly describe what the Le Gall Cup is?

To celebrate the 100th anniversary of Le Gall Dairy, the SILL Group organized an event for its professional clients: the first edition of the Le Gall Cup. For this occasion, five pastry chefs from around the world were invited to spend a week participating in a pastry competition, as well as exploring the Brittany region, Le Gall’s production processes, and Le Gall Professionnel products.

Which countries were represented in this competition?

For this first edition, five countries were represented: Japan, South Korea, Thailand, Italy, and France.

How did the contest go?

On Saturday, September 30, the contestants each had 3.5 hours to showcase Le Gall Professional Butter and Cream Cheese. There was only one requirement: they had to use at least 20% butter or cream cheese in their dessert.

Their plated dessert was judged by a panel of industry experts: Christophe Marguin, Philippe Urraca, Jean-Luc L’Hourre, Yvon Morvan, and Thierry Nougaret. The competition took place in an environment conducive to creativity, at La Chocolaterie Saint Thonan (29).

A successful first edition

Who won this first edition?

Chef MAY, representing Thailand, won first prize with his dessert titled “Cheese mousse and strawberry jelly with brown butter ice cream and strawberry consommé with basil, mint ice cream, hazelnut candies, and caramelized figs.”
