Project Background: A Major Renovation Without Interrupting the Restoration Work
The UMANE Group has undertaken extensive renovation work at Le Verdon, a nursing home for dependent seniors located in Saint-Julien-le-Montagnier, in the Var department (83). This work rendered the facility’s main kitchen completely inaccessible for several months.
Faced with the need to ensure a continuous food supply—150 residents to feed every day—the UMANE group decided to rent a modular production kitchen from LocaCuisines.fr. The operator, SODEXO, handled the operational management of the temporary kitchen throughout the rental period, with a kitchen staff of six people.

Dimensions and Footprint
The temporary kitchen set up at the Verdon site consists of four interconnected technical modules, providing a usable production area of 72 m², bringing the total footprint to 150 m² once circulation areas, access points, and required safety zones are factored in.
Electrical connection only
All LocaCuisines installations are powered entirely by electricity, with no gas connection. This technical choice significantly simplifies regulatory procedures at an occupied site and reduces commissioning time. It also ensures enhanced safety in an environment that accommodates vulnerable individuals.
Technical Installation: Crane Operations and Site Constraints
Installation using a crane between existing buildings
Installing the modules required the use of a crane between the existing buildings of the nursing home. This technique is essential when ground-level access is limited or when the modules must be lifted over structural obstacles. It requires close coordination between LocaCuisines, the crane company, and the main construction site teams.
Compliance with Fire Safety Regulations
In accordance with the fire safety regulations applicable to Type J public-access facilities—care facilities for the elderly—the modules have been located more than 8 meters from any existing building. This regulatory distance ensures that a potential fire will not spread and meets the requirements of the departmental safety authorities.
Production Organization: A Kitchen That's Up and Running from Day One
The central kitchen operated by LocaCuisines ensures that all hot and cold meals are prepared in accordance with HACCP protocols, food traceability requirements, and the specific needs of healthcare and social services settings, including modified textures, special diets, and portion sizes tailored to residents. Over seven months of continuous operation, the team of six cooks supervised by SODEXO has produced and served 150 meals per day without any service interruptions.
